I usually cut those into small pieces, put on a plate, sprinkle water, cover with plastic wrap and put in a microwave. Regarding the above recipe for Japanese Sweet Potato French Toast: can I substitute a regular sweet potato and how do I prepare it? Do I cook it first then scoop out the flesh and put into the blender with the orange juice and cinnamon? If Japanese sweet potatoes are anything like American ones, they are very hard in their raw state.
